Bah Humburger – spicy turkey burger

Serves 10

100g banana shallots
20g garlic
100g sliced jalapeno
200g grated cheddar
1.2kg turkey mince
1.2ml rapeseed oil
500g sprout slaw
500g pickled cabbage
250g cranberry sauce
100g caramelised red onion chutney
10 brioche buns
5g salt
10g cracked black pepper

Sprout slaw ingredients:
500g brussels sprouts
500g white cabbage
100g Caesar dressing
100g Parmesan cheese
10g cracked black pepper
5g salt


Finely chop the shallots and garlic, and sauté until softened. Remove from the heat and allow to cool.

Finely chop the jalapenos.

Mix the cooled shallot and garlic mix with the jalapenos, grated cheese and seasoning and add to the turkey mince.

Divide into 150g patties, seal in a frying pan and place in the oven for 10-12 minutes at 180’C until cooked.

Make the sprout slaw by thinly slicing the washed sprouts and white cabbage and mix with the Caesar dressing, Parmesan and seasoning. Bind together well.

Mix the cranberry sauce with the red onion chutney to make the relish.

Build the burgers with the sprout slaw and cranberry relish.
