Easter Log Cake

Makes: 1 cake

Ingredients:

Cake:
250g dark brown sugar
150ml sunflower oil
3 eggs
250g plain flour
1tsp vanilla
2tsp baking powder
0.75 tsp salt
1tsp bicarbonate of soda
2tsp cinnamon
300g finely grated carrot
25g chopped walnuts
30g chopped almonds

Frosting:
300g icing sugar
150g cream cheese
150g butter
1tsp vanilla

Chocolate nest and decoration:
300g dark chocolate
2tsp oil
10 chocolate Mini Eggs
30g green icing
20g cocoa powder
Fondant icing

Method:

1. To make the cake, mix the sugar and oil together and beat for 20 minutes. Add the eggs and beat for a further 15 minutes – it’s a great arm workout!

2. Sift in the flour, vanilla, baking powder, salt, bicarbonate of soda and cinnamon, beating for two minutes on a low speed. Stir in the carrot and bake at 175’C for one hour.

3. To make the frosting, in a large bowl mix the cream cheese ad butter until smooth, using an electric mixer. Slowly add in the icing sugar and vanilla until it’s smooth and creamy.

4. Now to decorate! Melt the chocolate and put into a piping bag with a small nozzle. Pipe into a bowl of iced water to form a nest. Once the chocolate has set, remove from the water and leave to dry.

5. Thinly spread the remaining chocolate between two pieces of parchment paper. Roll up the parchment papers and put in the fridge to set.

6. Press the green icing through a fine sieve to form the textured grass.

7. To assemble the cake, trim the top of the cake to make it even, cutting into two even layers. Sandwich the cake with the frosting and evenly spread remaining frosting all over the cake.

8. Unroll the parchment paper containing the chocolate and place the shards around the cake. Melt a little more chocolate and using a pastry brush, apply more chocolate around the cake. Leave to set in fridge for 10 minutes. Sprinkle cocoa powder on the top and sides and add the nest, grass and chocolate eggs. Shape the bunny bottom out of fondant icing and attach to side of cake.
