Watermelon Rind, Lime and Chilli Jam

Ingredients
1 watermelon rind, diced
4 red peppers
8 red chillies
8 garlic cloves
100g ginger
850g sugar
700g red wine vinegar
6 lime leaves
Juice of 2 limes
2g xanthan gum

Method

Blitz the chilli, pepper, garlic and ginger together to form a paste.

Add all remaining ingredients to the paste, excluding the lime juice and bring to the boil.

Leave to simmer until it reduces to a thick jam consistency. Add the lime juice and leave to chill.
