Oyster mushroom sausage flatbread with smashed butter bean
Smashed butter bean (serves 10)
500g butter beans, drained weight
1 lemon zest, plus juice of 1 lemon
50g olive oil
1.1kg Devil’s Kitchen oyster mushrooms
Smashed butter bean mix
50g flat-leaf parsley
5g sea salt
50ml olive oil
To make the smashed butter bean, place all ingredients in a food processor and blend together.
Cook sausages as per manufacturer’s instructions.
Once cooled slightly, slice diagonally into 5 pieces.
Add butter beans, parsley, salt and gently mix. Drizzle with olive oil.
To build, place the flatbread on a plate. Top with smashed butter bean and oyster mushroom sausage mix.
