EQ Sausage Roll

Makes 8

20ml olive oil
250g finely chopped onions
150g finely chopped mushrooms
150g grated and carrots
20g chopped garlic
450g sausage meat
400g cooked green lentils
5g chopped sage
2g cracked black pepper
4g salt
1 sheet of puff pastry
Egg wash to brush pastry


Fry off the onions, mushrooms, carrots and garlic until golden. Take off the heat and allow to cool.

Place sausage meat, lentils, veg mix, sage and seasoning in a bowl and combine well.

Place meat on pastry and roll.

Double glaze with egg wash.

Bake at 180’C for 25-30 minutes. Once cooked, cut into portions and enjoy.
