Feta and Sunflower Seed Soda Bread

Serves: 12 portions

Soda Bread Ingredients:
250g plain flour
250g wholemeal flour
10g salt
14g bicarbonate of soda
500g buttermilk
150g feta cheese
124g sunflower seeds
Semolina, for dusting

Guinness Butter Ingredients:
200g softened butter, whipped
100g Guinness, reduced by half and cooled


Place a generous handful of wholemeal flour on the table, ready to coat the sticky dough when you have finished mixing it.

In a large bowl, add the flours, salt and bicarbonate of soda and rub well together.

Add the sunflower seeds and mix well again.

Add the feta cubes and gently roll them around the flour to ensure they are separate and evenly coated but not crumbled.

Add the buttermilk and bring together gently by folding through as if you’re making a scone.

Scoop out the mixture and place into the flour. Take all the mixture out the bowl.

Roll the dough in the flour to coat but not to incorporate.

Place onto some baking paper with semolina on it, cut four sections into the loaf, being careful not to cut all the way through.

Slide into a hot oven at 220’C for 17 minutes. The core temperature of any loaf should be between 94-96’C.

To make the Guinness butter, mix both ingredients together. Keep at room temperature.
