Gingerbread Pancakes

Makes: 15 portions (2 pancakes each)


1kg self-raising flour
40g baking powder
200g sugar
8 eggs
200g butter
20ml vanilla essence
1.4 litres milk

40g ground ginger
500g mascarpone
100ml double cream
50ml clotted cream

Whatever you choose – raspberries, blueberries, raspberry coulis, gingerbread men biscuits, icing sugar, mint leaves etc.


1. Combine flour, baking powder and sugar all together.

2. Melt butter, then add to the whisked eggs, butter and vanilla. Combine both mixes together.

3. To make the filling, combine mascarpone, double cream, clotted cream and ground ginger together.

4. Garnish as you wish and serve.
