300g strong white flour
18g caster sugar
140ml water, plus 60ml
10g mixed spice
5g whole green cardamom pods
75g plain white flour
60g apricot jam
Preheat the oven to 180’C.
In a mixing bowl, add strong flour, sugar, salt, yeast, mixed spice and orange zest. Combine with a dough hook.
Add luke warm water gradually to the dry mix and mix for 2-4 minutes.
Emulsify small pieces of butter and mix at medium speed for 10-12 minutes.
Leave the dough to prove for an hour or until doubled in size.
Knock back and shape into 70g balls.
Prove in a gastro tray with at least a two finger width space between each roll.
Prove again until doubled in size.
Using the rest of the plain flour and water, make a thick paste to make the cross (adding the water a tablespoon at a time).
Spoon into a piping bag and pipe a line along each row of the buns.
Bake in the oven at 180’C for 10-12 minutes, until golden brown.
With the remaining oranges in a saucepan, warm up the juice of the oranges, apricot jam and cardamom, then sieve to get rid of any lumps.
Once the buns are out the oven, brush them with the orange/apricot glaze, then leave to cool.
